Four years ago, I met my husband and got married one year after. In 2018, our beautiful daughter Allegra was born!👶🏻
 Becoming a MOM was the happiest time of my life, but also a challenging one.  Still today, I am constantly trying to find that “perfect” balance: being a caring mom, a loving wife, and a woman with an accomplished career.

Love how honest you are about your eating habits and diet in general. It’s always in the extreme from most models out there. No hate to other models who sell us the “I eat everything. Pizza, burger, dessert etc” but in the best shape of their life. Like, stop lying 🥴. And then there are others who sell us the unrealistic clean diet. As I said, no hate to them but sometimes it gets frustrating for normal people like me. It’s so refreshing to see a model be honest with us with what she eats in a day. In Scandinavia we also make the food from scratch and use full fat products and lots of vegetables and if possible many here prefer organic food locally produced. My own cooking and food is similar to the one my grandparents and parents raised me on (even though I make it vegan). I feel more full and will stay full for longer when the products are full fat and not diet food or processed. So the insulin levels will stay pretty much like a narrow line instead of up and down which will impact the body in a negative way and also make you extremely hungry after crashing after food with too much of this or that. That matched with regular workouts and walking rather than taking the car all the time or the bus.

I usually don’t comment on videos but wanted to really thank you for being open and honest about this topic. I am not a model, love natural beauty, wear very minimal make up and consider myself a feminist. But I have done lip fillers as well and LOVE them. However when I discuss it openly I have noticed so much judgement, even from girls who spend hours in salons having their nails and hair done… People can be so hypocritical when it comes to this topic unfortunately

Your skin looks amazing and I feel like what a lot of people do not address is skin procedures like how many times you get certain types of facials, if you have extractions done or some sort of lifting or hyperpigmentation treatment. Turkey Meatballs: 

2 pounds lean ground turkey
1 cup panko (Japanese breadcrumbs)
1/4 cup finely chopped carrots
1/4 cup finely chopped zucchini
1/4 cup finely chopped onion
2 large eggs
2 tablespoons Italian seasoning
1 tablespoon coarse sea salt
2 tablespoons olive oil
3/4 cup homemade or store-bought low-sodium chicken broth

Directions:
Step 1
 In a large bowl, mix turkey, panko, carrots, zucchini, onion, eggs, Italian seasoning, and salt until well combined; form into 1-inch balls.

 Step 2
Heat olive oil in a large skillet over medium heat. Add meatballs and cook, turning, until browned, about 7 minutes.

 Step 3
Add 1/2 cup chicken broth; cover and reduce heat to low. Cook until liquid is almost completely absorbed, about 7 minutes. Add remaining 1/4 cup broth and increase heat to medium; cook, uncovered until liquid is absorbed. Serve.

Hi Loves!❤️ We are back to your fav section of the channel with some more healthy but REALISTIC recipes! I try to eat everything in moderation & eat things that make me feel good - I no longer eat something that I don't like to eat just because they are healthy! I believe that to sustain a nutritious diet, you need two things! 
First: you need to like the food you eat!
Second: it needs to fit your schedule & lifestyle!

Green Juice: Celery , Cucumber , Green Apple , Lemon , Orange , Ginger 
Lunch: 

Ingredients for salad : 
Spinach, Romain, Mango, Tomatoes, Red Onions, Oven-roasted chicken tenders (425F - 20 min) 

Dressing: Dijon Mustard, Olive Oil, Lemon, Honey, Salt 


Dinner Recipe: 
 
Ingredients: 
-Salmon 
-onions
-capers
-celery
-parsley 
-garlic
-white wine 

Preparation: 

-Pan sear Salmon to medium rear (about 7-8 min) 

-Pan sear all the vegetables in a different pan until cooked. 
-Put veggies on top of the salmon before serving

Leeks & Potatoes Soup: 
INGREDIENTS


3 tablespoons unsalted butter
4 large leeks, white and light green parts only, roughly chopped (about 5 cups)
3 cloves garlic, peeled and smashed
2 pounds Yukon Gold potatoes, peeled and roughly chopped into ½-inch pieces
7 cups chicken or vegetable broth
2 bay leaves
3 sprigs fresh thyme
1 teaspoon salt
¼ teaspoon ground black pepper
1 cup heavy cream
Chives, finely chopped, for serving

INSTRUCTIONS

Melt the butter over medium heat in a large soup pot. Add the leeks and garlic and cook, stirring regularly, until soft and wilted, about 10 minutes. Adjust the heat as necessary so as not to brown.

Add the potatoes, broth, bay leaves, thyme, salt and pepper to pot and bring to a boil. Cover and turn the heat down to low. Simmer for 15 minutes, or until the potatoes are very soft.
Fish out the thyme sprig and bay leaves, then purée the soup with a hand-held immersion blender until smooth. (Alternatively, use a standard blender to purée the soup in batches; see note.) Add the heavy cream and bring to a simmer. Taste and adjust seasoning with salt and pepper. If soup is too thin, simmer until thickened. If it's too thick, add water or stock to thin it out. Garnish with fresh herbs if desired. 



 Baked Salmon With Asparagus and Leek: 

INGREDIENTS: 

½ bunch asparagus (about 8 ounces), trimmed and thinly sliced on the bias

1 small leek, white and pale-green parts only, thinly sliced, washed well, and drained

2 tablespoons extra-virgin olive oil

Coarse salt and freshly ground pepper

4 skinless salmon fillets (each about 5 ounces and 1 inch thick), preferably wild

¼ cup packed fresh herbs, such as tarragon, dill, basil, or parsley, or a combination, for serving

Lemon wedges for serving.

DIRECTIONS: 
Preheat oven to 400 degrees with racks in the upper and lower thirds. Cut four 12-by-17-inch pieces of parchment. Fold each in half crosswise to make a crease, then unfold and lay flat. Toss asparagus and leek with oil in a bowl. Season with salt and pepper.

Season fish with salt and pepper. Arrange a fillet on one side of the crease on each piece of parchment. Top with asparagus mixture, dividing evenly. Fold each piece of parchment over, then make small overlapping pleats to seal open sides, creating half-moon-shaped packets.

Bake on 2 rimmed baking sheets 10 minutes for medium-rare. Transfer to plates and carefully cut packets open with kitchen shears (steam will be released). Serve, topped with herbs and squeezed with lemon wedges.

Creamy Mushroom Sauce: 

Ingredients: 
½ small onion diced
1 tablespoon butter
12 ounces mushrooms
salt and ground pepper to taste
2 cloves garlic minced
 3 sprigs fresh thyme or 1/4 teaspoon dried thyme
 ½ cup white wine
 ½ cup chicken broth
 ⅔ cup heavy cream (can be changed for halfa  and half) 
 1 tablespoon cornstarch
 3 tablespoons fresh parsley

Directions : 

Saute onion in butter until golden .
Add mushrooms, salt, and pepper. Cook until mushrooms start to release juices. Add garlic and thyme to taste.
Add the wine & cook for a few minutes until the wine has almost evaporated.
Add the chicken broth and cream. Simmer for 5 minutes or until liquids have evaporated by half.
To thicken the sauce, combine cornstarch with 2 tablespoons of water and mix well. 
Add cornstarch mixture into the broth, go slowly as you might not need the entire amount of starch - depending on how thick you want it 
to cook for few more minutes! 
Season with parsley, salt, and pepper to taste.

"PASTA NORMA" 

Ingredients: 
-2 eggplants 
- 1 cup cherry tomatoes 
- 1 big tomato
-basil 
- mozzarella or burata 
- coarse salt 
-pasta 
-olive oil

Directions: 

- Eggplants-  slice & pre-soke in cold salted water for 15 min 
rinse & paper towel dry 

-pen fry eggplants until it turns into a paste consistency 
-on a separate pan, cook tomatoes on slow heat until paste consistency. 
- cook pasta
- in the end, mix it all together & serve (watch the video for more detailed directions) 
-garnish with mozzarella & basil
-serve

She’s starting to teethe, and while it's challenging, it's also a beautiful reminder of how quickly she's changing and developing. Every day with her is a new adventure, and I’m grateful to share these special times with you all!

My friend Rachael came over, and we had an amazing time cooking delicious strawberry tarts. As we baked, we reminisced about fun moments and reflected on our embarrassing stories over the years. We chatted about odd foods, our karaoke go-to songs, funny stories, and quirky moments, making it a truly memorable day. 

RECIPE - Strawberry, Vanilla, and Cashew Tart with Rose Apple | Serves 6 

Ingredients: 
Coconut Almond Base 
40G / 1½ OZ (½ Cup) Flaked Almonds 
125G / 4½ OZ (1¼ Cups) Dried Strawberries

Strawberry, Vanilla and Cashew Filling 
225G / 8 OZ (1½ Cups) Cashew 
60ML (¼ Cup) Young Coconut Water 
65G / 2½ OZ (½ Cup) Strawberries, Hulled 
75G / 3 OZ (½ Cup) Young Coconut Meat 
60ML (¼ Cup) Coconut Oil 
1 Tablespoon Freshly Squeezed Lemon Juice 
½ Vanilla Bean (Pod), Split Lengthwise 
90G / 3 OZ (⅓ Cup), Agave Nectar (G) 
½ Teaspoon Sea Salt 

To Serve 
250G / 9 OZ Strawberries, Hulled and Cut into Quarters 
2 Rose Apples, Quartered, Cored and Sliced Lengthwise 
Pesticide-Free Baby Pink Rose Petals (Optional) 
Store-Bought Dehydrated Strawberries (Optional) 

Instructions: 
For the coconut almond base, line the base and sides of 8 fluted tart tins with removable bases (each 8 cm / 3 inch) with clingfilm. Place all the ingredients in a food processor. Using the pulse button, process until the mixture resembles coarse breadcrumbs. Transfer the mixture to a bowl, cover and refrigerate for 30 minutes until firm. Divide the mixture evenly into each prepared tart tin and press the mixture over the base and sides until 3 mm / ⅛ inch thick. Place the tart cases in the dehydrator for 3 hours at 48C / 118 F. Alternatively, dry in an oven heated on its lowest setting. Remove and cool before use. 

To make the strawberry, vanilla and cashier filling, place the cashews in a bowl, cover with water and soak for 3 hours before draining and rinsing. Place the cashew and the remaining ingredients in a blender and process until the mixture is smooth and emulsified. Refrigerate the mixture until it is set, about 6 hours. 

To serve, place the tart cases on 8 plates. Spoon the mixture into the cases, then top each with sliced strawberries and rose apples. Sprinkle with baby pink roses and dehydrated strawberries.
